-2 organic blueberry scones
Lunch:
-cucumber salad
-pad thai with tofu
Snack:
-unsalted, roasted pistachios
-1 more organic blueberry scone...whoops
-1 turtle candy
Dinner:
-Cannellini Picata (vegan!): spiral pasta with lemon picata sauce, cannellini beans, capers, fresh basil, and sundried tomatoes
-1 piece toast with raspberry jam
Beverages:
-water all day
Execerise: Dave and I went for a run the day before, but today I had to help my friend move a queen sized bed and large coach from one apartment to another, so I inadvertently got a bit of a work-out in.
Notes: Robin and I have traded spaces as now *I* don't have internet at home. AT&T loves to do this to us every couple of months just for kicks. Assholes. Anyway, this week I'm challenging myself to eat as vegan as possible...not because I plan on becoming vegan, but just to be aware of how easy it is to not use so many animal products each day. So far so good--the vegan cannellini picata I made was just lovely!
